Zillertal Melcher Muas

The “Tyrolean Melchermuas” is an old peasant dish from the Zillertal. Originally it was meant for hard-working people and is therefore very nutritious. Today you will find this outrageously good Tyrolean delicacy on the menus of the mountain huts in the Zillertal.

In some huts it is even still prepared in the traditional iron pan over an open fire. But the “Melchermuas” can also be prepared quite simply at home in the frying pan.

Here is the recipe for you to try it at home:

Ingredients for 4 persons
  • 120g butter
  • 200g flour
  • 600ml milk
  • 1 pinch of salt
  • sugar and cinnamon for sprinkling
  • cranberry or blueberry jam to taste
Preparation

For the dough, melt half the butter in a pan. Stir in the flour quickly, sifting if possible so that the mixture does not become lumpy.

Pour in cold milk, stirring constantly. Add salt and bring to the boil. This should produce a smooth, not too firm dough. Heat the remaining butter in a pan and fry the dough in it. To do this, flatten the dough and fry it on one side first until it is golden, almost a little brown. Then flip it or use a spatula to turn it. After turning, fry until the dough is golden on both sides.

Sprinkle the Melchermuas with sugar and cinnamon and serve it with cranberry jam, preferably in a pan. It goes wonderfully with a fruity Alter Williams Birne schnapps
